FAQs

A blast chiller rapidly forces cold air over hot food at high velocity, pulling the core temperature down through the temperature danger zone as quickly as possible. This prevents the growth of harmful bacteria and protects food quality. Afinox blast chillers bring food to +3°C within 90 minutes. Far faster and safer than conventional refrigeration, which can take several hours.

Blast chilling rapidly cools food to around +3°C for short to medium-term refrigerated storage. Shock freezing drops the core temperature to -18°C for long-term frozen storage. Most Afinox units offer both modes selectable per cycle, giving your kitchen maximum flexibility depending on the product and storage requirement.

It depends on your volume, application, and available space. The Faster-E suits cafes, restaurants, and catering operations needing reliable daily blast chilling. The Infinity X is ideal for high-volume or multi-function operations needing chilling, freezing, thawing, and cooking in one cabinet. The Spring Plus and Pizza Spring Plus are refrigerated prep counters for bakery/pastry and pizza operations respectively. Contact our Skanos team and we'll recommend the right unit for your specific situation.

Yes. Afinox blast chillers are designed with HACCP compliance built in. Each unit automatically logs time and temperature data throughout every cycle, providing a complete auditable record for food safety inspections. This aligns with Australian food safety standards requiring rapid cooling of cooked food through the temperature danger zone.

Blast chilling enables cook-ahead and bulk-prep workflows that aren't possible with conventional cooling. Your team can cook large batches during off-peak hours, chill them rapidly, and portion them out for service on demand. This reduces staff needed during peak service, eliminates cooking to order for every dish, and compresses prep time across the week. Many Skanos customers find their blast chiller pays for itself within 12–18 months through labour savings alone.

Yes. When you buy through Skanos, you get ongoing local Australian support — not just a sale. We provide technical support, servicing, and access to spare parts to keep your equipment running. We're here for the long term, not just the handover.
